Ingredients
  

Relish:

  • 1/2 cup Roasted Red Pepper Sliced
  • 1 Tbsp Finely Chopped Olives
  • 2 Tsp Oil
  • 2 Tsp Freshly Snipped Thyme or 1/2 Tsp dried
  • 1/4 Tsp Black Pepper

Burger:

  • 1/4 cup Finely Chopped Onion
  • 2 Tbsp Bread Crumbs
  • 2 Tbsp Ketchup
  • 1 Tbsp Horseradish Paste
  • 1 Tbsp Mustard
  • 1/4 Tsp Salt
  • 1/4 Tsp Pepper
  • 1 lb. Ground Beef
  • 4 Slices Smoked Mozzarella Cheese

To Serve:

  • 4 Hamburger Buns Cut Open and Toasted Lightly
  • Fresh Basil Leaves

Instructions
 

  • Get your grill (gas or charcoal) to a good medium heat. The coals will be ready when they have a layer of gray ash on them.
  • Pop the pepper strips, olives, oil, thyme, and 1⁄4 Tsp of black pepper into a food processor, mix a little before pulsing. You want the food chopped, not liquidized, so be careful. Cover this and leave it to chill in the fried until serving time.
  • Mix up the onions bread crumbs, ketchup, horseradish, mustard, salt, and the second 1⁄4 Tsp pepper in a bowl. Add the meat and mix until just combined. Divide this mix into 4 patties that are roughly 3⁄4ʺ thick
  • Pop the patties onto an oiled grill rack and cook until the internal temp is 160°F (16–18 min). Remember to turn only once halfway through cooking. Just before you take the meat off, lay a slice of cheese on the top of each one so that it can melt a bit.
  • Serve on a toasted bun with fresh basil and 1 Tbsp of per bun of red sweet pepper relish.
