Ingredients
  

  • 6 Finely Sliced Scallions Include some of the green
  • 1 x Drained 8 oz Can of Water Chestnuts Chopped
  • 1/2 cup Sweet and Sour Duck Sauce Orange sauce
  • 2 Tbsp Oil of Choice
  • 2 oz Shiitake Mushrooms Chopped
  • 1 Clove Garlic Finely Chopped
  • 1 lb. Ground Chicken
  • 2 Tbsp Freshly Chopped Cilantro
  • 1 Tbsp Soy Sauce
  • 1/4 Tsp Salt
  • A Dash of Black Pepper
  • 4 Sesame Seed Round Buns Best Served Warm

Instructions
 

  • Mix roughly 2 Tbsp of the sliced scallions with an equal amount of chopped chestnuts and duck sauce.
  • Fry up the mushrooms, remaining scallions and garlic until they look tender (3 min). Leave it to cool a little and then add the mushroom mix with the chicken, remaining chestnut, cilantro and soy sauce in a bowl
  • Make up four patties about 3⁄4ʺ thick. Season the tops of the patties with a little salt and pepper.
  • Fry the patties in the recently abandoned pan (salted side down); med– heat. Sprinkle some more salt and pepper on them. Cook until 165°F (16–18 min), gently turning once. 5. Pop a burger in each warmed bun, garnish with a cilantro sprig and a side of sauce. Enjoy!
